The opening of the hotel brings two unique restaurants, an exclusive chef’s table experience and the brand’s legendary Peacock Alley to the rapidly transforming Qiantan District of Pudong.

ARAME
On the Waldorf Astoria Shanghai Qiantan’s ground level is ARAME, a restaurant serving contemporary European cuisine. Its menu focuses on seasonal, locally sourced ingredients that celebrate the bounty of the ocean, like calamari, sweet shrimp and sea urchin. ARAME, named after a delicate seaweed variety, embraces the pure flavors of its ingredients by preparing them over a wood-fired grill which utilizes lychee wood. It offers an extended brunch service available to guests until 2:00PM on weekdays and 3:00PM on weekends. Its signature dishes include:
- Blue Lobster: charcoal-grilled lobster that is then wrapped in delicate layers of marinated pig ear terrine, served with ají peppers, crispy rice cakes and a flavorful reduction of Taizhou red prawn broth
- The Wellington Potato: layered potatoes, Manchego cheese and bacon enveloped in flaky pastry and paired with black truffle-infused mushroom sauce
- Grilled Calamari: bold, tangy flavors from fermented chili, Yunnan tree tomato reduction and aromatic herbs make this dish unforgettable
Fu Cheng
Atop the hotel, Fu Cheng, led by Chef Justin Yang, serves Modern Min cuisine inspired by Quanzhou traditions. The space features a contemporary expression of traditional Shanghai architecture, inspired by the tranquil waterways surrounding the hotel. With its elegant curves and bespoke details, Fu Cheng offers a refined space perfect for intimate gatherings and grand events.
“Fu Cheng represents a new expression of Min cuisine that is deeply personal yet unmistakably Waldorf Astoria,” said chef Justin Yang, owner of Michelin-starred restaurant Hokkien Cuisine. “Qiantan is a district that is still writing its culinary identity, so we have the opportunity to honour Fujian traditions while shaping something distinctly modern. Each dish is crafted to celebrate heritage, seasonality, and the refinement that the Waldorf Astoria brand is globally recognized for.”

Fu Cheng’s menu includes:
- Deep-fried Eel with Finger Lime, the restaurant’s signature dish based off a family recipe that utilizes a 36-hour air-drying process followed by frying and finished with a citrus-infused honey glaze
- Braised Beef Steak, which is slow-braised for nearly three hours with curry and satay spices
- Double Boiled Duck Soup with Sandworm (above), featuring Fujian duck and dried sandworms that have been simmered for hours to develop a deep, flavor-rich broth
For an elevated experience, professional tea sommeliers have thoughtfully paired tea with each dish. These include Yancha from Fujian and Pu’er from Yunna.
Peacock Alley
The Peacock Alley at Waldorf Astoria Shanghai Qiantan was inspired by the original Peacock Alley at Waldorf Astoria New York. Like its predecessor, Peacock Alley offers guests an atmosphere that is refined and exudes timeless elegance. A curated afternoon tea featuring Western pastries with Eastern ingredients – such as kumquats and Chinese walnuts – is available to guests. In the evenings, the soft lighting and serene river views transforms Peacock Alley into a sophisticated lounge.
Starlight
Guests at Starlight can enjoy the panoramic views of the Huangpu River and the West Bund. Therein, the chef’s table is the central focus, inviting its guests into a personalized dining experience they can’t find elsewhere. Guests are encouraged to interact with the hotel’s chefs or guest chefs as they showcase their innovative dishes.
