El Califa de León: The Mexico City Taco Stand That Earned Its First Michelin Star

Nestled in the heart of Mexico City’s San Rafael neighborhood, El Califa de León has achieved what many thought impossible: becoming the first taco stand in Mexico City to receive a coveted Michelin star. Known for its simplicity and exceptional quality, this unassuming taquería has become a culinary landmark, redefining the potential of street food while staying true to its roots.

My first stop after landing in Mexico City for a recent trip for Día de Los Muertos was to check out this now famous taco stand. I love tacos and this was a spot that I had to check out to see if it lived up to the hype. I wanted to see what set these tacos apart from the rest.

What Sets El Califa de León Apart

For over five decades, El Califa de León has delighted locals and visitors alike with its legendary tacos. This modest taquería, with just enough space for a handful of diners to stand at the counter, is home to the star of the menu the Gaonera taco. The gaonera, an understated yet exquisite creation featuring thinly sliced beef filet seasoned only with a touch of salt and lime. The meat is cooked to perfection on an open flat top flame, while freshly pressed corn tortillas are prepared alongside, delivering a taco that is both rustic and refined. The balance of flavors and textures has earned the Gaonera its place in culinary history.

The Simple Taco Menu

The menu is simple with only a few options but it doesn’t stop there. Diners can savor other standout taco options like bistec (beef steak), chuleta (pork chop), and costilla (beef rib). Each meat is carefully selected and cooked with the same meticulous attention to detail, ensuring a consistent level of excellence. Accompanying the tacos are two house-made salsas—one fiery, the other mild—that elevate each bite, although the quality of the meat and tortillas hardly requires embellishment.

The restaurant is cash only so come prepared with plenty of pesos to try every taco option.

I ordered the gaonera and chuleta taco options with a coke and ate them with no salsa toppings, just meat and tortillas for me. The gaonera was the stand out winner and it definitely lived up to the one Michelin star rating. It has been three weeks since my visit and I am still dreaming about this taco bite. I still cannot figure out why this taco simply just tasted so much better.

A Win for Street Food Culture

Despite its newfound fame, El Califa de León has retained its modest charm. With a standing-only counter and an open kitchen, the taquería continues to offer an authentic street food experience. It’s a place where flavors reign supreme and the emphasis remains on delivering an honest and unforgettable meal.
