The Waldorf Astoria Beverly Hills recently opened Baldi, the next piece of the Baldi family’s culinary legacy. Led by Chef Edoardo “Edo” Baldi, it joins the family-run restaurants Giorgio Baldi in Santa Monica and e.Baldi in Beverly Hills, adding a Tuscan expression of the steakhouse to the fold. Baldi provides guests with a curated selection of prime and Wagyu cuts of steak prepared over open flame and paired with Italian dishes imbued with generations of thoughtful skill. The restaurant also boasts an impressive wine and spirits program.

An Ambience Inspired by Home
Upon entering Baldi, guests’ eyes can feast upon an Italian dinner party mural designed by Drawing Room NYC. The 180-seat restaurant features a central bar, semi-enclosed outdoor terrace and a private dining space that can host up to 50 people for special events. The restaurant was inspired by Chef Edo’s Chianti countryside home, complete with olive trees and natural elements that provide a calming environment. Intentional Italian warmth is at the heart of Baldi’s design by Ezequiel Farca Studio. Terracotta, warm woods, stone, marble, leather and woven textiles create an inviting ambience.

‘Less is More’ Menu Focuses On Italian Classics
Baldi’s menu focuses on creating dishes with simplicity and nostalgia. USDA Prime, American Wagyu, Australian Wagyu and Japanese A5 Wagyu are prepared over an olive wood-fired grill. Chef Edo’s signature house-made salsa verde and tomato-based Italian steak sauces accompany all steaks. The dinner menu also includes:
- Burrata, with pineless pesto, roasted cherry tomatoes and olive oil balsamic reduction
- Roberta’s Beef Polpettine, featuring a traditional soffritto Tuscan tomato sauce
- The Etruscan Salad, made with rucola, cabbage, farro, cannellini, apple, cucumber, tomato, avocado, basil and orange
- Sweet Corn Tortellini, rich with mascarpone and truffle butter
- Fettuccine, with sautéed Porcini and hint of tomato
- Sauro’s Wife’s Mezze Maniche with beef ragout
- Grilled Dover Sole in lemon sauce
- Edo Baldi’s Special Apple Pie a La Mode
- Pancake Soufflé for Two, with rum, strawberry and Grand Marnier Sauce
At the Bar, guests can choose from a hand-selected menu of Baldi staples, including:
- e.Baldi’s Unique Thin Crispy Crust Pizza, available as Margherita or Sapore di tartufo
- Bruschetta
- Lightly fried shiitake mushrooms with pecorino tartufato, a 36-year Baldi family tradition
- Sliced Artichokes with fennel and mild pecorino
- Nonna Ida from Parma, featuring cavatelli alla parmigiana, roasted eggplant, and tomato
- New York Strip from Double R Ranch, Washington

Timeless Italian Cocktails & Celebrated Italian Wines
Beverage Director Jim Kearns curated the cocktail program at Baldi to celebrate Italian aperitivo spirit with bright citrus flavors, refined classics and zero proof offerings that pair brilliantly with authentic Italian cuisine. The menu features:
- Limone Spritz: Malfy Limone gin, Limoncello, Acqua di Cedro, Baladin Cedrata, Lemon and Prosecco
- Bergamotto Tonica: Italicus Rosolio di Bergamotto, Sabatini Tuscan Dry Gin, Carpano Bianco Vermouth and Fever Tree Tonic
- Negroni Classico di Baldi: a playful classic Negroni including vintage ingredients like Malfy Gin Originale, St. George Bruto Americano and Carpano Antica Vermouth
- Baldi Manhattan: Punt E Mes, Russell’s Reserve Single Barrel Rye, Nocino, Angostura, and Bogart’s Bitters
Italy’s most celebrated wine regions are the focus of the wine program, focusing on Piedmont and Tuscany. Selections from France and the United States have also made the list. A range of Barolo and Barbaresco, Brunello di Montalcino, Super Tuscans, Bolgheri icons such as Sassicaia and Ornellaia and world-class Champagne and Bordeaux are available.

Baldi is located at 9850 Wilshire Blvd, inside the Waldorf Astoria Beverly Hills. It is open for dinner from Wednesday through Sunday, 5-10PM. Reservations can be made on Open Table.
